Adding some sour notes to fruit.

Hi people. Was wondering what is the best way to add a sour note, or tone down that candy like taste with some fruit flavours, in particular strawberry or berry mix concentrates. I know there are things like sour, but whats the best to use and what %'s? I dont want to make it go from sweet to sour, just give it an edge and shift it away from the candy taste.

I don't find Sour to be very good and get better results with citric acid (10% solution) at 0.5 - 2%. Sharpens fruits up, gives them a nice kick/tang.
 
Ahh, that's probably more the word i should have used and best describes what im after, yeah tang. Thanks for that info mate.
