I'd say the caramelisation on the coil was producing a rougher vape and you'd got used to it.

What @Ment said... maybe you've got it right this time and on your 1st build you either had too much cotton or a big hot spot on your coils which was giving you that scratchy sensation. The build and wick in your photo looks pretty good.
