What's the difference between temp and wattage mode ? I always use wattage mode so what wire is good for it ?

For Clapton coils you should stick to wattage mode - and for your particular application Either Nichrome or Kanthal coils would be most appropriate - just go look at the ones in the links I sent you via PM yesterday or speak to @Smut via PM who will be happy to help you with coil selection...
